Here’s a simple recipe for blueberry salsa that I’ve made for years. I use it as an appetizer, but also for topping grilled chicken or pork chops. Makes a great take along for barbeques and happy hours. Only 10 -15 minutes to chop and mix in a bowl. My kids love it, and it’s a healthy alternative to other snacks.
Ingredients:
One pint of blueberries, chopped
One red bell pepper, destemmed, deribbed and minced
1/2 medium red onion, minced
Three tbsp fresh minced cilatro
1/4 cup fresh (or store bought) lime juice
Dash of salt
Mix it all in a bowl and your ready to go.
